Beyond Sausage Buddha Bowl

1. Julianne onions and red bell pepper. Chop up some broccoli and red purple potato

2. Preheat over to 350 or use air fryer at 350 for 6 min

3. Add your veggies to a baking sheet. Drizzle veggies with olive oil, salt, paprika, and garlic powder. Bake in the oven for 10 min tossing the veggies until fully cooked

4. In a separate pan heat up a little bit of oil and slice your beyond meat. I used the hot Italian sausage. Cook your meat and throw in a little bit of chopped cilantro for flavor.

5. Serve your plate with rice, the cooked beyond meat and the roasted veggies and garnish with pomegranate seeds. Avocado slices would also be a great addition to this dish. Add a drizzle of some cilantro lime sauce on top.
