Spinach and mushroom feta pasta
1. Chop up 1 cup of mushrooms and 1 cup of spinach.
2. Slice half a red onion. And chop up about 3 cloves of garlic.
3. Toss all the veggies in a baking dish with oil, salt and pepper to taste. Place in oven at 350 degrees for 8-10 min.
4. In a separate pan, boil pasta of your choice. Season water with salt before adding pasta.
5. After 8-10 min, take your baking dish with veggies out of the oven and create a hole in the center and add your block of feta. Drizzle the block with more oil, red pepper flakes and garlic powder. Place back in the oven for 5 min.
6. Once cheese has melted, drain your pasta and add the veggies and cheese into the pot with pasta and stir. Add chili flakes for a little bit more of a kick.
