Happy Mother’s Day to all the strong, independent, warm hearted and loving mothers ♥️ Here are some brunch ideas to share with your loved ones to act “surprised” for your next Mother’s Day
French Toast (serving size 4 people)
1. In a bowl crack 3 eggs, add about 1/2 tablespoon of cinnamon, 1/4 cup of almond milk, and beat with a fork until everything is mixed
2. With the bread of your choice, in a heated buttered pan, dip the bread both sides in the egg mixture and place in the pan
3. To keep heated and warm place on a tray and put in the oven
4. Serve with sliced bananas, maple syrup, honey, Nutella, or any of your favorite toppings
Eggs in a Hole (serving size 4 people)
1. Take slices of bread and using the rim of a cup or a cookie cutter, cut out a while in the slices of bread. Set the extra bed aside for later
2. On a pan sauté spinach and set aside. Dice tomatoes.
3. In a buttered pan, place the slice of bread, add the spinach and tomatoes in the center of the bread. Crack an egg and add salt and pepper to taste. I love garlic, so I added a dash of garlic powder as well! With a fork, stir the seasonings into the egg
4. Flip the slice of bread and add cheese of your choice on top until it melts.
5. The extra slices of bread from the hole, can be added to the pan for a slight toast with butter
6. Toppings: avocado, salsa, cilantro
Sides
1. I love fresh fruit, so as a side to complement this Mother’s Day brunch I cut up fresh mango, strawberries and blueberries and made a fruit salad. As a dressing I mixed the juice of half a lime and added around a tablespoon of honey to it. Drizzled it over the fruit and mixed it well
2. We also bought chocolate covered strawberries, if you have time to make them I recommend doing that, not beats the taste of home cooked everything!
