Lemon Pepper Chicken Salad

An accident waiting to happen…

As I was in a rush to meal prep one night so that I could catch the Sunday night football game, what started off as my go to chicken recipe accidentally turned into the recipe I’m about to show you. Pepper was the last of my seasonings to add, and without noticing I opened the side of the pepper shaker with the larger opening. A whole ton of pepper spilled into the pan and I did nothing but stared at it. But a lot of pepper the first thing that came to mind was lemon pepper. Although it’s not one my favorite dishes I had to make do of what I had.

In a separate bowl I decided to sweeten it a little so I mixed together the juice of a whole lemon and about 3 tablespoons of honey and added sugar a little later based on the taste of the chicken. It surprisingly turned out real well and added a nice kick to my salad.

Go-to-recipe:

1. Chicken breast

2. 1/4 tablespoon of Garlic powder

3. 1/3 tablespoon of Cajun seasoning

4. Salt to taste

5. And in this case a whole lot of pepper

-Juice of one whole lemon

-3 tablespoons of honey and added sugar if needed

I fried my veggies in the same pan as the chicken and didn’t add any more seasoning to them. For veggies I used tomatoes, onions, and yellow bell pepper.
