The king of street foods in India… Pani Puri
This was my first time trying it out at home and it ended up being a success. It was quite simple and so much to eat!

1. 2 springs of fresh mint leaves
2. 2 green chilies
3. Juice of half of a lime
4. A handful of cilantro
5. 1 tablespoon of sugar
6. Water based on how much paste you have to dilute
7. Salt and black pepper to taste
Stuffing
1. 3 Peeled potatoes
2. 4 cloves of garlic
3. 2 tablespoons of Chaat masala based on spice preference
4. 1/4 cup of Onions
5. Tamarind sauce at Indian store
Steps:
1. Blend all of the ingredients needed for the pani in a blender
2. Boil the potatoes and garlic. Once cooked, mash them with some of the liquid left in the pot.
3. In a separate pan with a few tablespoons of oil caramelize the onions with salt and black pepper. Add chili powder and chaat masala and this step.
4. Take the mashed potatoes and add them into the onions. Add liquid as needed
5. Fry the store bought puris until puffed up
How to eat??
1. Poke a hole carefully in the puri
2. Add the potato stuffing inside the poori and the tamarind sauce
