Pantry C^2 Cookies

Inspired by Alix from Tasty, I wanted to try her pantry cookies. She posted this video today and I was bored, nothing surprising on this rain quarantine day who knows. These were surprisingly simple and super healthy.

Dry Ingredients:  

  • 2 cups of Oat Flour(grind rolled oats)
  • 1/2 teaspoon of baking soda
  • 1 pinch of salt
  • 1/2 cup of rolled oats

Wet Ingredients: 

  • 6 tbsp of browned butter: In a pan melt butter until slightly brown. Be sure to watch and mix the butter because you don’t want it to burn.
  • 1 egg: add the egg into the bowl once the butter has cooled
  • 1/4 cup of brown sugar
  • 1/4 cup of honey or maple syrup

Mix the dry ingredients into the wet and using a spatula fold the dry ingredients into the wet. To this cookie dough I added chopped walnuts, chocolate chips, and coconut flakes. Set aside for 10 min so that the oats have time to absorb any liquids.

On a greased sheet pan make little balls of the cookie dough. You should be able to make about 12 cookies.

Set your oven to 350 degrees and bake for about 7-8 minutes. Take out of the oven and let the cookies rest. (Do not eat the cookies immediately they will break)
