
Biggest debate ever… pineapples on pizza??
Personal opinion: HECK YES!
^ with this inspiration I put a twist on one of my favorite foods, TACOS!
I love the sweet taste that fruit brings to a savory dish. Like life, you need a little bit of sweet in everything spicy. There has to be the perfect balance between the good and bad, it’s not always good to have too much of just one thing.
So here it goes, the secret to these delicious veggie papaya tacos:
Corn tortillas (any shell of your choice)
Veggie papaya stuffing:
2 cups of broccoli (cauliflower is an alternative)
1 cup of shredded carrots
1 cup of diced red bell pepper
1 cup of diced papaya
2 roasted and diced jalapeños
1/4 cup of all-purpose flour
4-5 tablespoons of almond milk (any milk of your choice)
1 teaspoon of garlic powder
1 teaspoon of oregano
Salt and pepper to taste
Garden Salsa:
1 avocado
1/4 cup of red onion
1 diced roma tomato
2 tablespoons of fresh cilantro
2 tablespoons of lime juice
Salt and pepper to taste
Directions:
Preheat oven to 350 degrees
Take a pan and dry roast jalapeños until a nice chard appears on top. Cut into tiny pieces and place in a large bowl. To the bowl, add your chopped broccoli, shredded carrots, diced bell pepper and cubed papaya. Add your flour, garlic powder, taco seasoning, oregano, almond milk, salt, and pepper to this bowl. Give it a nice stir until all the veggies are coated in the seasonings.
Place veggie mixture on a lightly greased baking sheet. Place in oven at 350 degrees for 20 min.
After 20 min, flip the veggies over so that each side is nice and crispy. Place in oven for another 20 min. Once ready, take out and let the veggies set.
Garden Salsa:
In a separate bowl, add your avocado and tomato. Cut them into bite size pieces based on your taco shell. Finely dice your red onion and add them to this bowl. Add your chopped cilantro, lime juice, salt and pepper and give this salsa a nice mix.
Creating your zen taco:
Lightly toast 2 corn tortillas, and place on top of one another
Add your veggie stuffing to the taco shell
Add your garden salsa on top of the veggie stuffing
*Optional: I added a drizzle of salsa verde on top for a little bit of extra flavor*
Squeeze a little bit more of lime juice for taste
