Meal prepping can be a tedious task sometimes, I always run out of ideas on what to make. I’m not a picky eater but I definitely like variety throughout the week. I had some leftover zucchini and figured why not mix it in with some ground turkey and spices to make meatballs. They’re super easy to make and can be eaten alone or with another type of carb, like pasta or rice. you can also chop these meatballs up and eat them in a salad with other toppings of your choice.
INGREDIENTS:
- Ground Turkey(lean)
- 1/2 cup of shredded zucchini
- 1/2 cup of shredded carrots
- 1 egg
- 1 teaspoon of paprika
- 1 teaspoon of oregano
- 1/2 teaspoon of rosemary
- 1 teaspoon of garlic powder
- Salt and pepper to taste

DIRECTIONS:
- Shred the 1/2 cup of zucchini. Place the zucchini in a cloth and drain the excess liquid out.
- Shred one cup of carrots and add both the zucchini and carrots into a bowl along with the group turkey.
- Add 1 egg to the mixture.
- Add paprika, oregano, salt, pepper, rosemary, and garlic powder to the mixture.
- Mix well in a folding motion
- Create about 1 in balls and place in a pan with a little bit of avocado oil. (You can use any oil of your liking)
- Cook for about 3-4 on each side, make sure to only flip after browning, or else meatball will fall apart. After cooked on each side, cover with a lid for about 5 min, so the insides can cook.
