Cooking is an art, art changes, just as this recipe did. The initial idea was a cauliflower crust pizza, lamest excuse but I couldn’t find my pizza pan haha. That’s when it turned into pizza bites.
Ingredients:
- Half a head of cauliflower
- 1 egg
- 1/2 tablespoon of garlic powder
- 1/2 tablespoon of oregano
- Salt to taste
- 1 Roma Tomato
- 1 Avocado
- 1/2 cup of cucumber
- Parmesan cheese
- Salt and pepper to taste
Directions:
- Preheat over to 500 degrees
- In a food processor add the roughly chopped cauliflower head. Grind until finely chopped. Place in a bowl and put it in the microwave for 2-3 min.

- Take a cloth and add the cauliflower into the cloth. Ring the liquid out of the cauliflower, until completely flaky.
- In a bowl add the cauliflower, egg, garlic powder, oregano, salt and pepper to taste. Mix well.
- Put about 2-3 tablespoons of the cauliflower mixture in a muffin tin, to cover the bottom and pat around using fingers or the back of the spoon to create an even surface.

- Place in over for 15 min.
- Dice avocado, cucumbers and tomatoes.
- Once the cauliflower cups are ready, take them out of the tin and place in a serving dish.

- Add the tomatoes, avocado and cucumbers on top. Lightly sprinkle some Parmesan cheese on top
